The particular Chateaux that we were staying at produced red and white Bordeaux grapes. Their white grapes are subject to Noble Rot which is caused by a fungus that causes early maturing of the grapes (causing them to shrivel) and thus producing extra sweet concentrated wine. The grapes are then picked by hand to produce the wine. The wine is most commonly known as Sauternes. It can be drank as a dessert wine or as a aperitif with foie gras or cheese.
